Doing good for the environment and our community will always be a priority for us. We believe the results of running a business and producing spirits should have a positive impact on the world around us. We take pride in our work, our community, and our planet.

Our approach

We strive to be a different kind of distillery by focusing on crafting totally unique spirits, no matter the effort required. Our goal is to create products that are unlike any that exist today. We do this by using unique materials around us. Rescuing fruit and turning it into flavorful brandies is only part of what we do. We push the boundaries on familiar whisky styles and hope to introduce you to brand news ones. Hand made, each one, every time.

Brandy

  • Origins Apple Brandy

    44% ABV - Our first ever product, this over proof apple brandy eau de vie is perfect for cocktails or sipping neat as an after meal treat. The higher strength allows you to play with flavors by adding water or ice and experiences the spirit as it 'opens up' at different ABVs. This one went fast, so we are out of stock but working diligently to make more.

  • Wine Crisp Eau De Vie

    41.5% ABV - Single variety apple brandy eau de vie made from 100% Winecrisp apples harvested Fall of 2022. Delicate citrus and floral aromas and flavors unobscured by barrel aging. Now available!

  • Holiday Fruit Brandy

    This was a special release we did as a corporate gift. A combination of barrel aged grape (old vine zinfandel) brandy, peach brandy and apple brandy. Based on the customer goals we built a brandy highlighting stone fruits and apples with a refreshing and tangy finish.

Whisky

  • Duel Bourbon

    47.5% ABV - Our first whisky to see the light of day! This bourbon is a head to head battle of organic white dent corn and chocolate roast malted barley. Aged just 4 months in our 30 gallon barrels to preserve the rich malt and sweet corn interplay without being overtaken by the oak. This one is sneaky, as you experiment in cocktails you'll find the toasted, chocolate notes come to the forefront to take the day.

  • Illinois Bloody Butcher Corn Whiskey

    TBD ABV - Our partners at Ruebush Farms brought us a ton (literally) of bloody butcher corn and we made corn whisky. The new make spirit is earthy (so fitting) and a bit spicy but we've already seen it mellow out a bit in just the first few weeks in the barrels. This will be a limited release but if it goes well, we will put more away this fall for the future!

  • Illinois Single Malt Whiskey

    TBD ABV - Made with barley from Riggs Brothers Brewing and Farm in Urbana, IL and malted at Mammoth Malt this single malt is one of a kind. Aged in both new charred oak barrel and used Duel Bourbon barrels the final products will be one not to miss.

Liqueurs

  • It's Electric Coffee Liqueur

    25% ABV - This coffee liqueur uses the exact same cold brew we serve in our café from our friends at Whirlwind Coffee. The coffee is the star but the chocolate, hazelnut and honey flavors sure don't shy away from the attention.

  • High Voltage Coffee Liqueur

    30% ABV - A custom batch of cold brew to bring forward more concentrated flavors and support the structure of a higher ABV coffee liqueur, designed for cocktail creations. This may be you next new favorite.

  • Limoncello Lemon Liqueur

    30% ABV - Hand zesting hundreds of pounds of lemons isn't an easy task but we did it because we love what this drink has to offer. It's a summer time classic and we don't feel quite right about a distillery in Chicago that doesn't carry this Italian favorite. In our opinion this one can't be topped.

  • Liquid Gold Kiwi Liqueur

    21% ABV - We never dreamed we get to make something with kiwis but the opportunity to rescue a load of kiwis destined for waste was too good to pass up. We chopped the kiwis and infused them in high proof alcohol to extract the flavors. We then mixed in our hand made simple syrup to the perfect balance of sweet and tangy. The end result is a product you have to experience to understand. Supplies are limited and we aren't quite sure when we'll make it again so get yours while you can!

  • That's My Jam Strawberry Liqueur

    25% ABV - Nearly a 1/2 pound of fresh strawberries went into each bottle of this delicious fruit liqueur. Perfect for sipping neat, or adding some flash to your mimosa bar, you’ll be refreshingly surprised. Get it while it lasts!
